About The Singleton of Dufftown 54 Year Old Single Malt Scotch Whisky
Glendullan is situated in Dufftown, the Whisky capital of the world. As one of the busiest Whisky epicenters, it is home to some of the greatest Scotch Whiskies ever created. Founded in 1898, by William Williams & Sons from Aberdeen, the distillery was actually decreed by King Edward VII in 1902. Like most distilleries, Glendullan has a history of ownership changes and renovations. In 1926, the distillery was bought out by Distillers Company Limited, then switched hands to Scottish Malt Distillers in 1939. By 1962 the distillery was renovated, and only a decade later a new facility was constructed near the original site. In 1985 the original facility was mothballed.“Glendullan 2” is also a workhorse, putting out 4 million liters of spirit per year, producing several labels. The distillery itself has official bottlings and has been producing the Singleton brand since 2007. A bioplant, which processes the spent lees, was also opened on-site in 2014. The distillery has 3 wash stills with an impressive capacity of 33,700 liters, and 3 spirit stills with 23,800 liters of capacity. They source their unpeated maltings from Diageo's industrial site, and the mashing takes place in a 12-ton mash tun.
The Singleton Paragon of Time series features their oldest and rarest whiskies. This expression is the oldest release from The Singleton to date, having been crafted more than half a century ago in Dufftown, each process taking its time, the barley malted and turned by hand. The oak butt cask was hand-filled on October 31st, 1966. It was finally matured in a Pedro Ximenez sherry-seasoned cask for an additional sprinkling of richness. Finally, the whisky was bottled at 88.2 proof.

About The Singleton
Situated in the Speyside region of Scotland, the Dufftown Distillery was founded in 1895 by four wine merchants who, together, purchased a stone built saw and meal mill and converted into a distillery. Located near the confluence of the Rivers Dullan and Fiddich, the distillery draws its water from Jock's Well, which is renowned for its incredibly pure and flavorful spring water (on more than one occasion, nearby distilleries — particularly Mortlach — have been caught attempting to divert water from the well to their own distillery).Singleton of Dufftown Single Malt Scotch Whisky is crafted exclusively from malted barley, which is milled and mashed before being fermented in the distillery's wooden washbacks. Following fermentation, the whisky is distilled twice: first through a copper pot wash still and then again through a copper pot spirit still.

While primarily a blending and finishing operation, Three Chord can recognize very special casks when they see them. When they found a small lot of barrels, they knew that they had to be bottled without modification. Their first limited release expression is Whiskey Drummer, a straight bourbon with a mash bill of 78.5% corn, 12.5% rye, and 9% barley that has spent 15 years in its oak casks. Three Chord Blended Bourbon Whiskey is "inspired by music, enhanced by technology." It's the brainchild of acclaimed musician, songwriter, and producer Neil Giraldo and his Ann Arbor, Michigan-based Steel Bending Spirits company. Giraldo has long admired the vibration that is the source of music. "I also saw how drinks resting on our guitar amplifiers would vibrate and wondered if the implementation of sound and vibrations could also be used to alter and enhance the structure of a seasoned spirit," says Giraldo. "I wanted to take that same philosophy and apply it to making bourbon."Three Chord sources their whiskey from Kentucky, Tennessee, North Carolina, and Indiana. Whiskey maker Ari Sussman has worked with 15 distilleries, winning several awards in the process. Now he carefully watches over the blending process, bringing together some of the finest bourbons and ryes of varying ages. The assembled blend goes into casks, treated with their proprietary pyrolisis barrel-toasting process. A number of different casks of varying char levels are used ― these include French and American oak, as well as uncharred barrels from Cognac and Spain. Each small batch is thorou ghly inspected by a sensory panel before the spirit is bottled in Chelsea, Michigan.

About Tobermory 21 Year Cask Strength Manzanilla Finish Scotch Whisky
Tobermory uses optic barley sourced from several Scottish malt makers, meticulously selected by their own master distiller. The barley is soaked in fresh water for two to three days and then spread out on the distillery floor to germinate for one to three weeks (depending on the season). The barley is constantly monitored, turned, and tended, and as it germinates, it is infused with the distinct sea mists of Mull. The barley is then milled in a traditional Porteus mill to the Master Distiller's exact specifications. They distill their whisky using the same techniques they used over two hundred years ago, using two wash stills and two low wines stills.This 21-year-old Tobermory is a well-aged single malt that was finished in Manzanilla sherry casks. Manzanilla is a paler, drier sherry with a salty flavor, meaning that the influence of the cask is different than that of your typical rich sherry. The whisky gets additional citrus and spice notes from the Manzanilla casks. Bottled without any coloring or chill-filtration at 107.6 proof, the expression is limited to around 5,500 bottles.

Tomatin Single Malt Scotch Whisky is made from plump, Scottish barley. After the barley is harvested, it is mashed and fermented before being distilled twice through Tomatin's copper-pot stills. "Our family links to the whisky industry date back to 1824," says William Wemyss, the founder and CEO of Wemyss Malts, "when John Haig built his distillery on family land in Fife."Wemyss (pronounced "Weems") is the ancient Gaelic word for caves and stems from the rocky outcrop on which the Wemyss family home — Castle Wemyss — rests. Haig's distillery eventually became known as Cameron Bridge and in 1826, it became the first distillery to produce grain whisky using the column still method invented by Robert Stein.Today, the Wemyss family expertly bottles some of the finest whiskies made across Scotland. "Our whiskies are chosen by a tasting panel," says Wemyss, "and the tasting panel comprises people who work in the business, members of the family, and most importantly, is chaired by Charlie MacLean who helps us select the industry's best whiskies to bottle under our brand."
MacLean, who has been writing about whisky since 1981, was trained in "the sensory evaluation of potable spirits"by the Scotch Whisky Research Institute in 1992. In addition to being a visiting lecturer at the Smithsonian Institution, he is also a Councillor of Clan Maclean and was elected Master of the Quaich (Quaich is derived from the Gaelic word meaning cup), one of the Scotch industry's highest accolades, in October 2009.
Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky was distilled at the Caol Ila Distillery and matured for three decades in a single cask. Nestled in a hidden cove near Port Askaig, Caol Ila Distillery (pronounced "Cull Eela,") was founded in 1846 by Hector Henderson. It borrows its name (which means "The Sound of Islay"in ancient Gaelic) from the sea sweeping past its dramatic and almost hidden location — it is situated between a steep cliff and the eastern shores of the Sound of Islay. For over a century, small coal-fired boats known as puffers navigated the Sound and brought barley, coal and casks to the distillery. Although the puffers no longer exist, Caol Ila continues to distill whisky using locally malted barley, along with pure spring water sourced from Loch Nam Ban (the water travels thr ough limestone and peat before reaching the distillery).

Wild Turkey Master’s Keep 17 Year Old Kentucky Straight Bourbon Whiskey is the oldest whiskey ever released by Wild Turkey, and the first to be released since Eddie Russell joined his father as Master Distiller earlier in 2015. Distilled in 1997, when Wild Turkey encountered a surplus of bourbon and shortage of space, Eddie decided to move the bourbon that would become Master’s Keep to a stone warehouse 200 miles away. After 17 years, Eddie believed the barrels had reached their peak flavor, and transported them back to Wild Turkey’s wooden warehouses before bottling them. Interestingly, the bourbon had fallen to 86.8 proof, the cask strength at which it was then bottled.“Master’s Keep is the result of a lot of experimentation, patience and faith,” says Eddie Russell.
As a result of this unique aging process, Wild Turkey Master’s Keep 17 Year Old Kentucky Straight Bourbon Whiskey has a beautiful auburn color and aroma of caramel, vanilla, peaches, apricots and burnt sugar. About Wild Turkey
Following the end of the American Civil War, the Ripy Brothers returned to their native state of Kentucky and, together, opened a distillery on the slopes of a hill in Lawrenceburg. The distillery operated continuously for nearly fifty years until the 18th Amendment, which prohibited the sale of alcohol in the United States, was ratified. Following the end of Prohibition, the Ripy Brothers Distillery was reopened, and a distillery executive named Thomas McCarthy took samples of maturing whiskey from the distillery on a turkey hunt with a group of friends. The follow ing year, his friends asked him to bring "some of that wild turkey whiskey" on their next hunt, giving birth to the distillery's new name.Today, Wild Turkey Distillery is stewarded by Master Distiller Jimmy Russell and his son Eddie Russell (together, the pair have over 90 years of experience producing bourbon). "I was born and raised in Lawrenceburg, Kentucky," says Jimmy, "which was a small community when I was growing up, but there were four bourbon distilleries here, and you had families working all the distilleries. You wanted to get in the business. My grandfather and my father, me, and now my son, we've all been in the business."

John David Willlett began distilling at the Moore, Willett & Frenke Distillery just outside of Louisville, Kentucky, during Reconstruction. In 1898, his son, A. Lambert Willett — who was just 15 years old at the time — began apprenticing with his father. Eventually, Lambert purchased a farm on the outskirts of Bardstown, Kentucky, and began construction of the Willett Distilling Company in the spring of 1935. The fully matured whiskey, which was personally developed by Morris, is finished in brandy casks for two years. This is the first whiskey to be aged in American brandy casks, which emphasize the rich flavors of dried fruit and nuts developed through Woodford’s grain selection and fermentation process.As a result, Woodford Reserve Master’s Collection Finished in Brandy Casks has an aroma of chocolate, maple syrup, and dark dried fruits. The palate of toasted hazelnuts and toffee covered fruit is accented by wood and spicy notes, with a warming caramel finish.

Woodford Reserve Double Malt Selections represents the eighth expression in the Master's Collection series. The release includes two whiskies: Woodford Reserve Classic Malt and Woodford Reserve Straight Malt Whiskey. "Our legal department would not let us call it "˜single malt' because it's not made in Ireland or Scotland,"Morris says. Each whiskey is made exclusively from malted barley and then triple distilled through traditional, copper-pot stills. Following distillation, Woodford Reserve Classic Malt is aged for nine years in casks that were formerly used to mature bourbon. These types of casks are traditionally used to mature Scotch, and contribute notes of buttered bread, strawberries and vanilla to the whisky. In addition, these casks give the whiskey a long, malty finish.Woodford Reserve Straight Malt Whiskey is aged for nine years in casks composed of new, American oak. These types of casks are traditionally used to mature American whiskies such as bourbon or rye. As a result, they contribute more tannins to the whiskey, and give the whiskey an aroma of oats, rich oak and caramel. The aroma gives way to notes of spicy cinnamon and cloves on the palate, which are balanced by hints of citrus, bananas and pears. The finish is long and warm, with a touch of sweetness. About Yamazaki Sherry Cask 2013 Edition Single Malt Whisky
The Yamazaki Single Malt Sherry Cask 2013 is made from 100% malted barley, which is milled and mashed before being fermented with water sourced from the foothills of Mount Tenno. The water is said to be have been preferred by Sen No Rikyu, Japan's legendary tea master. After the barley has been fermented, the wash is distilled through Suntory's copper-pot stills — the first of their kind outside of Scotland — before the whisky is aged in casks which used to hold oloroso sherry giving it a rich and fruity taste profile."This is all done by hand — the traditional way," says Osamu Abe, the manager of Yamazaki distillery, referring to the cooperage taking place at the distillery. "This is called yagura — craftsmanship. You must watch and listen to how they're made. In Japan, we say "use all 5 senses." Of course we learn from others, but our own senses are key.

In February 1899, Shinjiro Torii opened a store in Osaka, Japan, that imported and sold wine. Within a decade, Torii began producing his own sweet grape wine called Akadama Port Wine, which became wildly popular throughout the country. In 1923, Torri, who had been fascinated by whisky his entire life, decided to expand his business and began construction of the Yamazaki Distillery, Japan's first-ever whisky distillery.Although inspired by traditional Scottish distilleries, Torii envisioned a uniquely Japanese approach to whisky and chose a location for his distillery that offered a climate and terrain that were completely different to those of Scotland. Nestled on the periphery of Kyoto, Yamazaki Distillery is situated at the confluence of three rivers — the Katsura, Uji, and Kizu — that provide the warm, damp environment ideal for the production and maturation of whisky.
